Strawberry Dessert Pizza

A short post today, but as I promised, here is another recipe that can be used with the pizza dough crust recipe that I posted last Thursday.  This is as delicious as it is pleasing to the eye.  You will be sure to wow your guests and family alike.

Now remember this pizza dough recipe is made in your bread maker and can be stored in your fridge for at least 3 days.  This recipe is made with real fruit and although this one is strawberry, I have made it with apples as well and there is no reason you can’t substitute most any of your favorite fruits.

Strawberry Dessert Pizza

Ingredients

  • 1/2 Pizza Dough Recipe (I make the whole recipe and then just refrigerate half of the dough).
  • 2 cups fresh strawberries (cut into small pieces)
  • 1/2 cup sugar
  • 1 Tablespoon plus 1 teaspoon corn starch
  • 1 teaspoon vanilla
  • 1 1/2 teaspoon lemon juice
  • 1 drop of red food coloring (optional, if your strawberries are not super red, you can use it for aesthetic purposes)
  • For Streusel Topping:
  • 1/3 cup sugar
  • 1/4 cup flour
  • 2 tablespoons cold butter
  • 1/8 teaspoon ground nutmeg
  • For Cream Cheese Drizzle
  • 4 ounces cream cheese (soft)
  • 2 tablespoons butter (soft)
  • 1 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla

Instructions

    For Fruit Topping
  1. In a medium saucepan, combine diced strawberries, sugar, corn starch, vanilla and lemon juice, cook and stir over medium heat for 10 to 12 minutes until it thickens, your strawberries soften a little and the sauce has a glossy look.
  2. Be careful not to mash the strawberries too much, they will cook down but you want fruit pieces in the finished product.
  3. You can add a drop of red food coloring at this time if you want a more vibrant color.
  4. Set aside to cool just a bit.
  5. Preheat oven to 450 degrees. I put my pizza stone in the oven at this time to heat it as well.
  6. Roll out the pizza crust dough into a circle (about 12inch diameter).
  7. Crimp the edges of the dough so they will keep the fruit topping contained when it cooks.
  8. After I roll mine out I put it on a piece of parchment paper on another pan for transporting it to the oven.
  9. Prepare streusel topping.
  10. Spread the fruit topping evenly on the dough.
  11. Sprinkle the streusel topping over the fruit filling.
  12. Carefully slide the parchment paper onto the heated pizza stone..
  13. Bake for approximately 12 minutes, until the crust is browned (peek under the crust to make sure it is done.
  14. Drizzle with Cream Cheese frosting.
  15. For Streusel Topping:
  16. Either in a food processor or a bowl, combine flour, sugar and nutmeg.
  17. Cut in the cold butter until it is crumbly.
  18. Set aside
  19. For Ccram Cheese Frosting:
  20. In a medium sized bowl, cream the cream cheese, butter and vanilla.
  21. Slowly add the powdered sugar and beat until it is fully incorporated.
  22. For Additional notes:
  23. If you are substituting apples or other fruit you may want to add cinnamon or another spice that is complimentary to that fruit. Also with apples you can swap brown sugar for the white sugar in the streusel topping and add 1/2 teaspoon of cinnamon.
